  • DRESSING

  • 1 cup olive oil (can reduce to 3/4 cup)
  • 1 extra large lemon, juice of (can use 2 lemons ( make certain that the lemon is at room temperature before squeezing)
  • 2 -4 teaspoons dried oregano (start with 2 teaspoons)
  • 3 teaspoons fresh minced garlic (about 2 medium cloves)
  • 1 teaspoon dried basil
  • 2 tablespoons red wine vinegar
  • 12 teaspoon salt (or to taste)
  • 1 teaspoon sugar
  • 12 teaspoon fresh ground black pepper (or to taste)
  • SALAD INGREDIENTS

  • 1 large romaine lettuce, chopped (or use 2 small)
  • 2 -3 plum tomatoes, cut in wedges (use Roma tomatoes)
  • 1 English cucumber (peeled, seeded and chopped)
  • 1 red onion, cut in slices
  • 1 green bell pepper (seeded and cut into rings or sliced) (optional)
  • 12 lb feta cheese, crumbled (or to taste)
  • 1 cup kalamata olive

directions

  • For the dressing; in a processor or use a wire whisk process/whisk the olive oil with lemon juice, 2 teaspoons dried oregano, garlic, dried, basil, red wine vinegar, salt and sugar until smooth (add in more oregano and lemon juice if needed).
  • Season with black pepper.
  • Chill in fridge for a couple of hours before using to blend flavors.
  • Place the salad ingredients in a large bowl.
  • Pour dressing over; toss to combine.
  • If desired allow the salad to sit at room temperature for 20 minutes before serving, or you can refrigerate for 1 hour (tossing a few time during sitting time).

  1. Can this recipe be doubled or tripled for a large crowd? Curious about the salad dressing being too overbearing if we added 6 cloves of garlic as well as other seasonings.

  1. Kittencal,I absolutely appreciate your recipes. You definitely know what you're doing and have good taste and instincts when it comes to food.One thing I'd suggest for your Greek Salad is to let your chopped tomatoes, onions, cukes, and peppers, spend a few hours bathed in the dressing in the fridge, tossing periodically. Then introduce those much more flavourabe veggies to the lettuce, feta, and olives when serving.Thanks for being an ever trusted recipe resource.Cheers,

  2. The first time I made this recipe it was a 3 star recipe for me. <br/>I just changed the directions it a bit and it was a five star recipe!! Here's what I did:<br/>I mixed the basil, oregano, pepper, vinegar and oil and poured over the onions and let them sit for 1-2 hours. And sprinkled the sugar and salt on the tomatoes and let them sit for a few mins before tossing them into the salad. I mixed everything together (along with the onions, and their oil/vinegar). It was one of the best greek salad i ever had!! <br/>Thank you kittencal for a fabulous recipe!

  3. My family all loves this, and it's often requested at parties. Like others, I leave all the veggies in the dressing for a couple of hours. The leftovers are even better the next day.<br/>I realize 'original' Greek salad doesn't have lettuce, and it doesn't need to be included if it offends your sensibilities.

  4. No no no! Greek Salad NEVER has lettuce in it (or parmesan for that matter). Just because you use oregano and feta doesn't mean you have to call it a "Greek" salad. Although I complement on your use of fine herbs, this is not a Greek salad by any means nor should you even use the term.

  5. This is a nice salad and comes very close to the one I often order in a local restaurant. I added a bit of chicken to ours to make it more of a meal. Dh really liked the dressing.

  1. I made this salad for a party and everyone loved it. I substituted key lime juice for lemon because that's what I had and after everyone had eaten I realized I forgot to put in the cucumber! It was still great and I had many requests for the dressing recipe. Thanks for posting!

Perfect Greek salad but it was too much dressing for the amount of ingredients and there was a pool of dressing in the bottom of the serving dish and I did follow the directions to add before serving. I have now made this a number of times, once even adding gluten free pasta to make it more of a meal! I used a good flavour organic olive oil, fresh organic lemon, organic mountain oregano from Greece, organic fresh garlic clove, organic apple cider vinegar in place of red wine vinegar for religious reasons, sea salt, to taste, a little more organic cane sugar because if my change of vinegar, romaine lettuce hearts, I left out the onion, no bell pepper, plus the rest of the ingredients. I will make this dressing and salad or modified as I try to avoid cheese again!

  4. WOW! I can't believe I have never reviewed this recipe! Kitten, it's the best greek salad going. I've made it for years with rave reviews. In fact, it was this recipe that kept me coming back to Zaar. I basically make the dressing as is and instead of just using a green pepper, I use red and orange pepper. It really pops all kinds of different colors that way. Thanks for a wonderful recipe I and my family will enjoy for years!

  5. I've made this twice now, and each time I am over run with requests for the recipe. Next time I make it I am putting a card with the recipe number @ Recipezaar. I have also made it with pasta instead of the romaine lettuce, and it is even better the second day. Thanks for a GREAT recipe!!
