I am thinking about which I like more, Christmas or Easter. Christmas is magic for me, winter, snow, family together is something which I really like. Easter is something similar but different and both occasions are when family is sitting at big dinner table and spending time together.

Spring is my favorite season so that’s why I like Easter. Do you know what you are going to make for Easter this year? If you don’t know yet this recipe is super choice for you. Homemade Coconut Cream Eggs is favorite Easter recipe in my family. This recipe is very soft, tender, moist and super yummy. I like coconut very much and you can make it very easy so that’s why I like it the most. You can make it in different shapes and you don’t need to wait till Easter to make it. You can also use freeze dried coconut in this recipe.

This recipe is so nice and my children like it as much as I like it. I can say that I call this recipe energy egg. You can decorate if desire and I decorate them with my children every time. Homemade Coconut Cream Eggs Recipe

Homemade Coconut Cream Eggs - Easter is coming so make this recipe and surprise your family and children. You need only few ingredients and few minutes for this recipe! Your Easter family table will look incredible with these Homemade Coconut Cream Eggs!

Ingredients

  • 8 oz softened cream cheese
  • 1 tablespoon Butter, softened
  • 4 cups powdered sugar
  • 1 cup coconut, shredded
  • 2 cups Semi-Sweet Chocolate Chips
  • 1 tablespoon shortening
  • Chocolate syrup

Instructions

  1. Line a half baking sheet with parchment paper, set aside
  2. In a medium bowl, using a hand mixer beat cream cheese and butter until blended
  3. Add powdered sugar and coconut and stir well until incorporated
  4. Refrigerate for about 1 hour or until easy to mold with hands
  5. Dust your hands with powdered sugar and mold coconut mixture into egg shapes
  6. Place coconut egg on parchment paper, do the same with the rest of the coconut mixture
  7. Place in the freezer for 1 hour or until eggs are firm
  8. Melt chocolate chips and shortening in the microwave by heating for 30 seconds then stirring and repeating process until it is melted and smooth
  9. Using a fork, dip egg into chocolate and flip to cover completely
  10. Tap the fork on the edge of the bowl or place them on a rack to remove the extra chocolate
  11. Place back on parchment paper
  12. Refrigerate until chocolate has set
  13. Drizzle chocolate syrup onto each egg if you desired

    They are delish I have 1 grandchild (boy) he loves the coconut and peanut butter eggs. instead of making them individual I use a 2 pound mold to make them I make 1 of each. He then cuts them and gives some to everyone

    Help! The coconut cream never solidified. Even after being in the freezer overnight they were still soft. I went ahead and dipped them in the melted chocolate chip and shortening and the chocolate hardened, but the moment you touched the eggs the chocolate melted on your fingers. I couldn’t serve them in such a state and ended up tossing the batch. What went wrong, what is the trick to getting the cream to solidify and the chocolate to not immediately melt on your fingers?

      Hi Karen, You need to follow the quantity precisely to make sure it’s not too dry or too soft so the coconut cream eggs don’t fall apart when you dip them in the chocolate. If it’s too soft, add more shredded coconut, little by little, until it reaches the right consistency. Hope this helps!

    So I made these last Easter and just made them again. This time I made them ball shaped. I made the mistake of putting the chocolate balls on a rack over a waxed papered cookie sheet. When I went to put them in a tin they were stuck to the wrap and I pulled a hunk off the bottom. Didn’t affect the flavour! They are sweet but delicious!!

    My Hamilton Beach mixer that is 3 months old Died doing this recipe! I am not sure which was the problem! Hee, hee! The mixer, the recipe or me ! I had the mixer at 2nd level. Should I have maybe done a faster speed? I seriously don’t know which was the problem. Tastes great though! ☺

    So glad I came across this recipe, just in time for Easter. This is my first attempt at coconut eggs since my favorite candy shop closed. Kids love them. Does this have a video? They came out great except not as smooth looking, and chocolate did not smooth over nicely. I used chocolate wafers. Should I have tried to smooth and round them before freezing Thanks! Taste is delicious!
