ingredients

  • 2 lbs boneless beef cubes, for stew
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 2 (15 ounce) cans black beans
  • 2 (14 1/2 ounce) cans chili-style chopped tomatoes
  • 1 teaspoon sugar
  • 1 (6 ounce) can tomato paste
  • salt and pepper, to taste
  • sour cream
  • shredded cheddar cheese

directions

  • Cut the beef into 1-inch cubes.
  • Place beef in slow cooker and turn it on low.
  • Sprinkle the chili powder, garlic powder and cumin over the meat.
  • Add onion and green pepper.
  • Drain and rinse the cans of beans and add them to the slow cooker.
  • Add tomatoes and sugar.
  • Cover and cook on low for 8 to 10 hours.
  • Uncover and sir in the tomato paste.
  • Season with salt and pepper.
  • Garnish with sour cream and cheddar cheese.

  1. Loved it! Looked more like stew until I added the tomato paste, but that transformed it. Also used a spoonful of agave nectar instead of sugar - dissolves readily and cuts the calorie count a bit. Chunks of meat were perfectly tender. This and cornbread on a snowy evening - thanks for the recipe!

  2. I was using up some beef I had leftover and came across this recipe. I was really getting tired of eating all my excess beef UNTIL I tried this recipe! This was a wonderful chili, and normally I would much prefer ground beef in my chili- not any more! It took about 9 hours in my crock pot (6 on low and 3 on high-my pot takes forever to cook!). At the end my beef was tender (but still in cubes) so I broke it up with a potato masher, giving me the texture I wanted. Thanks Mary, for this super recipe!Roxygirl

  3. I'm almost positive that I've made this one before but doesn't matter I still loved it. I don't use much sugar but I did have a little brown sugar for baking some cookies or something and put that in...also some crushed red pepper and cilantro. Outside of that not too much else. Love pepper rings and sport peppers on the side if I've got 'em. Nothing like beef stew meat that's been slow cooking for 4 hours didn't even need to chew really. Its so flexible that you can add just about anything you like and it still comes out great. Top it off with a couple of 16oz.cans of beer and maybe a few chips and you're good to go. Very good thank you !!!

I made this with the exception of using a half tp. of honey instead of the sugar (as we don't eat it unless we have to)and substituted a cheap Chuck Steak that I cut up instead of the beef stew meat..and it was absolutely delicious! Had some fresh bread with it and the family ate it like they had been starved for a week! Try it and see, you'll be hooked too.

  5. Hubby and I liked this chili. I had never used beef cubes to make chili before, and it was a good change. I cut the recipe in half, but that was the only change I made. I guess we must like our chili hotter than most because this did not have enough heat for us. Oh I did make one addition, I added 4 cloves of garlic. I would make this again, I would just do more chili powder and more cumin for that smoky taste. Thanks!

  1. I used Carroll Shelby's chili mix minus the masa flour cause I didn't need it and 1 oz semi sweet chocolate and seared the meat before putting in the crockpot I also put the tomato paste in with the other ingredients. Great recipe. Family loved it.

  3. Used a 2 1/2# pot roast with tenderizer for the meat. Seared the meat before putting in the crock pot. Sauteed the peppers and onion too. Also added an Anaheim pepper and used regular diced tomatoes and used no sugar. Used a one pound package of dried black beans that I had cooked for a different recipe. Adjusted the seasonings accordingly for the additional meat.

  5. Awesome...we really liked this. The stew beef came out nicely tender and very tasty. By mistake (wasn't wearing my glasses) I used 2 cans of stewed tomatoes instead of the chili tomatoes, but it did work out. I'll be more careful in future. You really do need more chili powder and cumin for the flavor. Thanks, Mary, for a keeper. . . . . . Janet
